Ingredients:
- 6 cups freshly shredded green cabbage
- 2 large carrots, shredded
- 4 celery ribs, thinly sliced
- 1 bunch fresh cilantro, chopped
- 4 green onions, sliced
- 2 cups fresh or frozen organic corn kernels
- 1/4 cup crumbled cotija cheese
Dressing:
- 1/2 cup plain Greek yogurt
- 1 TbspĀ homemade taco seasoning
- 1 fresh lime, juiced
- sea salt and black pepper, to taste
Instructions:
- Shred your cabbage and carrots into a large salad bowl.
- Add the celery, cilantro, green onions, and corn.
- In a small bowl, whisk together all of the ingredients for your dressing.
- Pour dressing over the cabbage and toss very well to coat.
- Sprinkle with cotija cheese and enjoy!
- Stays good in the fridge for up to 2 days.
