Ingredients:

  • 6 cups freshly shredded green cabbage
  • 2 large carrots, shredded
  • 4 celery ribs, thinly sliced
  • 1 bunch fresh cilantro, chopped
  • 4 green onions, sliced
  • 2 cups fresh or frozen organic corn kernels
  • 1/4 cup crumbled cotija cheese

Dressing:

  • 1/2 cup plain Greek yogurt
  • 1 TbspĀ homemade taco seasoning
  • 1 fresh lime, juiced
  • sea salt and black pepper, to taste

Instructions:

  1. Shred your cabbage and carrots into a large salad bowl.
  2. Add the celery, cilantro, green onions, and corn.
  3. In a small bowl, whisk together all of the ingredients for your dressing.
  4. Pour dressing over the cabbage and toss very well to coat.
  5. Sprinkle with cotija cheese and enjoy!
  6. Stays good in the fridge for up to 2 days.
  7. Enjoy!
