These chilled chicken tortilla roll-ups combine cooked chicken, cream cheese, sour cream, cheddar, bell pepper, green onions, and spices. Four tortillas make four to six servings after the logs are chilled and sliced.
Ingredients
- 2 cups cooked chicken, shredded
- 1 cup non-fat cream cheese, softened
- 1/2 cup non-fat sour cream
- 1 cup reduced-fat shredded cheddar cheese
- 1/2 cup diced bell peppers, any color
- 1/4 cup chopped green onions
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- 4 large flour tortillas
- Fresh cilantro leaves, optional garnish
Instructions
- Mix the chicken, cream cheese, sour cream, cheddar, bell pepper, green onions, garlic powder, onion powder, paprika, salt, and pepper until fully combined.
- Lay out the tortillas. Spread the filling evenly over each one, leaving a small border around the edge.
- Roll each tortilla tightly into a log.
- Wrap the logs in plastic wrap and refrigerate for at least 30 minutes to firm.
- Unwrap and slice into bite-size pieces.
- Arrange on a platter, garnish with cilantro if desired, and serve chilled.
Use cooked chicken that has been kept refrigerated, and return the roll-ups to the refrigerator until serving.
