Blueberry Biscuit Cobbler

This blueberry cobbler bakes six simple biscuit portions over a blueberry filling in an 8×8-inch pan. The finished recipe makes six servings.

Ingredients

  • 2 cups blueberries
  • 2 tablespoons sugar, divided
  • 1 tablespoon all-purpose flour
  • 1 teaspoon cornstarch
  • 1 cup Bisquick Heart Smart mix
  • ⅓ cup skim milk
  • ⅛ teaspoon cinnamon
  • Nonstick cooking spray

Instructions

  1. Preheat the oven to 400°F.
  2. Combine the blueberries, 1 tablespoon sugar, flour, and cornstarch in a medium bowl.
  3. Coat an 8×8-inch pan with nonstick cooking spray. Add the blueberry mixture.
  4. In a separate bowl, mix the Bisquick, milk, remaining 1 tablespoon sugar, and cinnamon.
  5. Form the dough into 6 biscuits and arrange them over the blueberries.
  6. Bake for 20 minutes, until the biscuit centers are set with no wet dough.
  7. After removing the cobbler from the oven, use a fork to gently break up some of the softened blueberries.
