Ingredients:
• 18 oz. frozen mixed berries
• 3 tablespoons sugar-free maple syrup
• 1/2 tablespoon cornstarch
• 3 graham cracker sheets
• 3 cups plain, fat-free Greek yogurt
• 1 – 1 oz. package Jello sugar-free instant pudding, cheesecake flavor
• 1 tablespoon vanilla extract
Instructions:
1) Add the berries, sugar-free maple syrup and cornstarch to a saucepan. Bring to a boil, then simmer for 10 minutes. The berries should be somewhat broken down and the sauce should have thickened. Remove from heat.
2) While the berries are cooking, turn the graham cracker sheet into crumbs. Add the graham cracker crumbs to the bottom of six dessert dishes.
3) In a bowl, mix together the yogurt, instant pudding and vanilla extract. Mix together really well, then add to the dessert dishes.
4) Add the berry sauce to the dessert dishes. Enjoy!
