Mini Peanut Butter Cookies

These small peanut butter cookies are portioned with about one teaspoon dough apiece and pressed with a fork before baking. The recipe makes about 36 cookies.

Ingredients

  • 2 tablespoons softened butter, such as light butter
  • 3 tablespoons brown sugar
  • ⅓ cup peanut butter
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 cup flour
  • Cooking spray

Instructions

  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper and coat it lightly with cooking spray.
  2. Using an electric mixer, cream the softened butter with the brown sugar.
  3. Add the peanut butter, egg, and vanilla. Beat for 2 minutes.
  4. Stir in the flour and baking powder until well mixed.
  5. Roll the dough into small balls, using approximately 1 teaspoon dough for each. Make about 36 balls.
  6. Arrange the balls on the prepared sheet and press each one down with a fork.
  7. Bake for 8–10 minutes, until the centers contain no wet dough and reach 160°F (71°C).
  8. Let the cookies cool for 5 minutes.

Yield

Makes approximately 36 mini cookies.

Storage

Keep cooled cookies in a sealed container. They may also be frozen.
