Mini apple pies
Ingredients (makes 12 mini pies)
2 medium apples (peeled, cored, finely chopped)
1 tsp lemon juice
1 tsp ground cinnamon
2 Tbsp brown sugar (or sugar substitute to lower points)
6 sheets reduced-fat phyllo dough (or use wonton wrappers for easier prep)
1 spray cooking spray
Optional: pinch of nutmeg or allspice
Instructions
1. Preheat oven to 375°F (190°C). Spray a mini muffin tin with cooking spray.
2. Prepare apples: In a small bowl, mix apples, lemon juice, cinnamon, sugar, and nutmeg.
3. Form crusts:
If using phyllo: cut sheets into 4″ squares, layer 2 squares per muffin cup (spray lightly between layers).
If using wonton wrappers: place one wrapper in each muffin cup.
4. Fill each crust with about 1½ Tbsp of apple mixture.
5. Bake for 12–15 minutes, until golden brown and bubbly.
6. Cool slightly before removing from the pan.
