Lemon Mousse

This chilled lemon mousse uses Greek yogurt for the creamy base and sugar-free lemon gelatin for structure. Boiling water dissolves the gelatin; cold water cools it before it is whisked into the yogurt mixture.

Ingredients

  • 2 cups non-fat Greek yogurt
  • 1 packet (0.3 oz) sugar-free lemon-flavored gelatin
  • 1/4 cup boiling water
  • 1/4 cup cold water
  • 1 tablespoon lemon zest
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons zero-calorie sweetener, such as Stevia
  • 1 teaspoon vanilla extract (optional)
  • Fat-free whipped topping, for garnish
  • Fresh strawberries or blueberries, for garnish (optional)

Prepare the mousse

  1. Put the gelatin in a heatproof bowl. Add the 1/4 cup boiling water and stir until completely dissolved.
  2. Stir the 1/4 cup cold water into the gelatin mixture.
  3. In another bowl, combine the Greek yogurt, lemon zest, lemon juice, sweetener, and optional vanilla.
  4. Slowly pour the gelatin mixture into the yogurt while whisking continuously.
  5. Once smooth and evenly combined, divide the mousse among individual cups or glasses.
  6. Refrigerate for at least 2 hours, or until set.

Before serving, add a dollop of fat-free whipped topping and fresh berries if desired.
