Ingredients
For the meatloaf
- 2 pounds ground beef
- 2 large eggs
- 1 cup almond flour
- 4 garlic cloves, minced
- ½ onion, chopped
- 1 teaspoon salt
- ¼ teaspoon black pepper
For the glaze
- ½ cup sugar-free tomato sauce
- 2 tablespoons olive oil
- 2 tablespoons mustard
- 2 tablespoons Worcestershire sauce
- 2 teaspoons granulated sweetener
- 2 teaspoons vinegar
Instructions
- Preheat the oven to 350°F. Grease a 9×5-inch loaf pan.
- In a large bowl, gently mix the ground beef, eggs, almond flour, garlic, onion, salt, and black pepper with your hands.
- Transfer the mixture to the prepared pan and bake for 30 minutes.
- Meanwhile, stir together the tomato sauce, olive oil, mustard, Worcestershire sauce, sweetener, and vinegar.
- Spread the glaze over the meatloaf.
- Bake for another 30–45 minutes, until the center reaches 160°F (71°C).
- Let the meatloaf rest for about 10 minutes before cutting it into 14 slices.
