Meatloaf with Tangy Tomato-Mustard Glaze

This meatloaf combines ground beef, eggs, almond flour, onion, and garlic, then finishes with a tomato, mustard, Worcestershire, and vinegar glaze. It makes 14 slices.

Ingredients

For the meatloaf

  • 2 pounds ground beef
  • 2 large eggs
  • 1 cup almond flour
  • 4 garlic cloves, minced
  • ½ onion, chopped
  • 1 teaspoon salt
  • ¼ teaspoon black pepper

For the glaze

  • ½ cup sugar-free tomato sauce
  • 2 tablespoons olive oil
  • 2 tablespoons mustard
  • 2 tablespoons Worcestershire sauce
  • 2 teaspoons granulated sweetener
  • 2 teaspoons vinegar

Instructions

  1. Preheat the oven to 350°F. Grease a 9×5-inch loaf pan.
  2. In a large bowl, gently mix the ground beef, eggs, almond flour, garlic, onion, salt, and black pepper with your hands.
  3. Transfer the mixture to the prepared pan and bake for 30 minutes.
  4. Meanwhile, stir together the tomato sauce, olive oil, mustard, Worcestershire sauce, sweetener, and vinegar.
  5. Spread the glaze over the meatloaf.
  6. Bake for another 30–45 minutes, until the center reaches 160°F (71°C).
  7. Let the meatloaf rest for about 10 minutes before cutting it into 14 slices.

Storage

Refrigerate cooled leftovers in a covered container and use within 4 days.
