Lean ham, spinach, onion, and reduced-fat cheddar fill this crustless quiche. With no pastry to prepare, the filling goes directly into a sprayed 9-inch pie dish and bakes until golden and firm.
Ingredients
- 1 cup lean diced ham
- 1 cup shredded reduced-fat cheddar cheese
- 4 large eggs
- 1 cup unsweetened almond milk (or skim milk)
- ½ cup finely chopped onion
- ½ cup chopped fresh spinach
- ¼ teaspoon garlic powder
- ¼ teaspoon black pepper
- Olive oil spray
Directions
- Preheat the oven to 375°F (190°C).
- Lightly grease a 9-inch pie dish with olive oil spray.
- Whisk the eggs, almond milk or skim milk, garlic powder, and black pepper in a bowl until smooth.
- Add the chopped onion, spinach, diced ham, and shredded cheddar. Mix well.
- Pour the mixture into the prepared pie dish and spread the solid ingredients evenly.
- Bake for an estimated 35–40 minutes, until the center is firm, reaches 160°F (71°C) on a food thermometer, and the top is golden.
- Cool for five minutes before slicing. Serve warm or chilled.
Keep the Filling Even
Finely chopping the onion helps it cook within the egg mixture, while small pieces of spinach and ham distribute more easily across the dish. Whisk the eggs and milk before adding those ingredients so the garlic powder and pepper do not collect in one area.
Once the mixture is in the pie dish, redistribute any ham or cheese that has settled. Begin checking at 35 minutes and look for a firm center, 160°F (71°C) on a thermometer, and a golden top. The five-minute rest gives the hot quiche time to settle before cutting.
