Ingredients:
1 cup lean diced ham
1 cup shredded reduced-fat cheddar cheese
4 large eggs
1 cup unsweetened almond milk (or skim milk)
1/2 cup finely chopped onion
1/2 cup chopped fresh spinach
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
Olive oil spray
Directions:
Preheat oven to 375°F (190°C). Lightly grease a 9-inch pie dish with olive oil spray.
In a bowl, whisk eggs, almond milk, garlic powder, and pepper until smooth.
Add chopped onion, spinach, ham, and cheddar to the egg mixture. Mix well.
Pour the mixture into the prepared pie dish.
Bake for 35–40 minutes or until the center is firm and the top is golden.
Let cool for 5 minutes before slicing. Serve warm or chilled.
