Ingredients
- 1 cup almond flour
- 1/2 cup granulated sweetener, such as Swerve
- 1/4 cup coconut oil, melted
- 2 tablespoons cream cheese, softened
- 1/2 cup fresh blueberries
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
- Mix the almond flour and granulated sweetener in a bowl. Add the melted coconut oil and stir until a dough forms.
- Place the dough between two sheets of parchment and roll it to 1/4-inch thickness.
- Mix the softened cream cheese with the vanilla. Spread it over the dough, leaving a 1-inch border.
- Distribute the blueberries over the cream cheese, then roll the dough tightly into a log.
- Slice into 8–10 roll-ups and arrange them on the prepared sheet.
- Bake for 15–20 minutes, until crisp.
