Ingredients:

– 1 cup almond flour

– 1/2 cup granulated sweetener (e.g., Swerve)

– 1/4 cup melted coconut oil

– 2 tbsp cream cheese, softened

– 1/2 cup fresh blueberries

– 1 tsp vanilla extract

Instructions:

1. Preheat oven to 350°F (180°C). Line a baking sheet with parchment paper.

2. Mix almond flour and sweetener in a bowl. Add melted coconut oil and mix until a dough forms.

3. Roll out dough between two sheets of parchment paper to 1/4 inch thickness.

4. Spread cream cheese mixture (mixed with vanilla extract) over the dough, leaving a 1-inch border.

5. Top with blueberries and roll up the dough tightly.

6. Slice into 8-10 roll-ups and bake for 15-20 minutes or until crispy.
