WW Crepe Rolls Recipe

Ingredients:

For the Crepes:

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup skim milk (or any milk of your choice)
  • Pinch of salt
  • Cooking spray or oil for greasing the pan

For Sweet Filling (Optional):

  • Fresh fruits (such as strawberries, bananas, or berries)
  • Greek yogurt
  • Honey or maple syrup
  • Cinnamon (optional)

For Savory Filling (Optional):

  • Grilled chicken or turkey slices
  • Crisp vegetables (such as spinach, bell peppers, or cucumber)
  • Light cream cheese or hummus

Instructions:

1. Prepare the Crepe Batter:

  • In a mixing bowl, whisk together the flour, eggs, milk, and salt until smooth. Let the batter rest for about 10-15 minutes to allow it to thicken slightly.

2. Cook the Crepes:

  • Heat a non-stick skillet or crepe pan over medium heat. Lightly grease the pan with cooking spray or a small amount of oil.
  • Pour a small amount of the crepe batter into the center of the pan and immediately tilt the pan in a circular motion to spread the batter thinly and evenly across the bottom.
  • Cook the crepe for about 1-2 minutes, or until the edges start to lift and the bottom is lightly golden brown. Carefully flip the crepe and cook for an additional 1-2 minutes on the other side.
  • Repeat the process with the remaining batter, stacking the cooked crepes on a plate as you go.

3. Fill and Roll the Crepes:

  • Once all the crepes are cooked, it’s time to fill them with your desired ingredients.
  • For sweet crepe rolls, spread a thin layer of Greek yogurt onto each crepe, then add slices of fresh fruit and a drizzle of honey or maple syrup. Sprinkle with cinnamon if desired.
  • For savory crepe rolls, spread a thin layer of light cream cheese or hummus onto each crepe, then add slices of grilled chicken or turkey and your choice of crisp vegetables.
  • Roll up the filled crepes tightly, tucking in the sides as you go to prevent the filling from spilling out.

4. Serve and Enjoy:

  • Arrange the filled crepe rolls on a serving platter.
  • If desired, garnish the sweet crepe rolls with additional fruit slices and a dusting of powdered sugar, or sprinkle the savory crepe rolls with fresh herbs or grated Parmesan cheese.
  • Serve the crepe rolls as a delightful snack, light meal, or dessert option. Enjoy them warm or at room temperature, and savor the delicious combination of flavors with each bite.
