Ingredients:

– 1 large head romaine lettuce, washed and torn into bite-sized pieces

– 1/2 cup homemade Caesar dressing (see below)

– 1/2 cup croutons (store-bought or homemade)

– 1/2 cup shaved Parmesan cheese

– 1/4 cup chopped fresh parsley

Homemade Caesar Dressing:

– 2 cloves garlic, minced

– 2 anchovy fillets, finely minced (optional)

– 1 egg yolk

– 2 tablespoons freshly squeezed lemon juice

– 1 teaspoon Dijon mustard

– 1/2 cup olive oil

– Salt and pepper to taste

Instructions:

1. In a blender or food processor, combine garlic, anchovy fillets (if using), egg yolk, lemon juice, and mustard. Blend until smooth.

2. With the blender or food processor running, slowly pour in olive oil until the dressing is emulsified and thick.

3. Season with salt and pepper to taste.

4. In a large bowl, toss the romaine lettuce with the Caesar dressing until the lettuce is evenly coated.

5. Sprinkle croutons and Parmesan cheese over the salad and toss again.

6. Garnish with parsley and serve immediately.

Crouton recipe (optional):

– 1/2 loaf Italian bread, cut into 1-inch cubes

– 1/4 cup olive oil

– Salt and pepper to taste

Instructions:

1. Preheat oven to 350°F (180°C).

2. Toss bread cubes with olive oil, salt, and pepper until evenly coated.

3. Spread on a baking sheet and bake for 10-12 minutes or until crispy.
