Ingredients:

  • 2 cans Mexicorn, drained
  • 1 can Rotel (regular or hot), drained
  • 2 cups reduced-fat shredded sharp cheddar or Colby-Jack blend
  • 6–8 green onions, thinly sliced
  • ¾ cup Greek yogurt
  • 8 oz non-fat sour cream
  • 1 small bunch fresh cilantro, finely chopped
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • Salt & black pepper to taste
  • Optional kick: diced jalapeño or a squeeze of lime juice

Instructions:

  1. In a large bowl, combine Mexicorn and Rotel.
  2. Stir in Greek yogurt and sour cream until smooth and creamy.
  3. Fold in shredded cheese, green onions, cilantro, and seasonings.
  4. Taste and adjust seasoning or heat as desired.
  5. Chill for 30 minutes before serving for best flavor.

Serve with tortilla chips, crackers, or fresh veggies.
