INGREDIENTS (MAKES 12 MUFFINS):
- 1 cup self-rising flour
(or 1 cup all-purpose flour + 1½ tsp baking powder + ¼ tsp salt) - 1 cup non-fat plain Greek yogurt
- ½ cup reduced-fat shredded mozzarella
- ¼ cup turkey pepperoni, chopped
- ¼ cup pizza sauce (low sugar)
- 1 tsp Italian seasoning
- Optional: chopped veggies (mushrooms, bell peppers, onions), crushed red pepper
INSTRUCTIONS:
- Preheat oven to 375°F (190°C). Spray a 12-cup muffin tin with nonstick spray.
- In a bowl, combine the flour and Greek yogurt to form a dough. It will be sticky—use a bit of flour on your hands if needed.
- Add mozzarella, turkey pepperoni, pizza sauce, and Italian seasoning.
- Mix well until evenly combined.
- Scoop the mixture into the muffin tin, filling each about ¾ full.
- Bake for 18–22 minutes or until golden and cooked through.
- Let cool slightly before serving. Enjoy warm!
