INGREDIENTS (MAKES 12 MUFFINS):

  • 1 cup self-rising flour
    (or 1 cup all-purpose flour + 1½ tsp baking powder + ¼ tsp salt)
  • 1 cup non-fat plain Greek yogurt
  • ½ cup reduced-fat shredded mozzarella
  • ¼ cup turkey pepperoni, chopped
  • ¼ cup pizza sauce (low sugar)
  • 1 tsp Italian seasoning
  • Optional: chopped veggies (mushrooms, bell peppers, onions), crushed red pepper

INSTRUCTIONS:

  1. Preheat oven to 375°F (190°C). Spray a 12-cup muffin tin with nonstick spray.
  2. In a bowl, combine the flour and Greek yogurt to form a dough. It will be sticky—use a bit of flour on your hands if needed.
  3. Add mozzarella, turkey pepperoni, pizza sauce, and Italian seasoning.
  4. Mix well until evenly combined.
  5. Scoop the mixture into the muffin tin, filling each about ¾ full.
  6. Bake for 18–22 minutes or until golden and cooked through.
  7. Let cool slightly before serving. Enjoy warm!
