Ingredients:
- 2 medium/large heads of cauliflower
- 2 Tbsps avocado oil, or olive oil
- sea salt and fresh ground black pepper
- 1 Tbsp dried oregano
- 1/4 tsp garlic powder
- 1/2 cup low sugar marinara sauce
- 1 cup reduced-fat shredded mozzarella cheese
- 1/4 cup sliced black olives
- 1/4 cup sliced nitrate free mini pepperoni
- a small handful of fresh chopped parsley, oregano, and/or basil
Instructions:
- Preheat your oven to 400 degrees f. and line a large baking sheet with parchment paper.
- Slice cauliflower into 1/2-inch thick slices around the stem. The parts near the stem that will hold together as slices will become “steaks”. Reserve any remaining cauliflower florets for making cauliflower rice at a later time.
- Place your cauliflower steaks onto your prepared baking sheet, and drizzle with oil, then sprinkle with sea salt, pepper, oregano, and garlic powder.
- Rub or brush everything into the cauliflower on all sides, then roast for about 20-25 minutes, turning (flipping over) once, until nicely golden brown.
- Carefully remove from the oven and top evenly with marinara sauce, cheese, olives and pepperoni. (Or toppings of your choice!)
- Return to your hot oven and bake for 3-5 minutes more, until cheese is all nice and melty.
- Sprinkle with fresh chopped herbs and enjoy!
