These oatmeal cookies combine banana, cottage cheese, powdered peanut butter, and chocolate chips. The dough is portioned by the quarter cup and baked until the cookies are set and lightly browned.
Ingredients
- 1 medium banana
- ½ cup fat-free cottage cheese
- 1 teaspoon vanilla extract
- ¼ teaspoon table salt
- 1 large egg
- ¼ cup powdered peanut butter
- 1 cup uncooked old-fashioned rolled oats
- 35 grams Lily’s Milk Chocolate Style Baking Chips, about 80 chips
Instructions
- Preheat the oven to 350°F (175°C). Line a sheet pan with parchment paper or a silicone baking mat.
- Mash the banana in a medium bowl until almost smooth.
- Add the cottage cheese and mash it to the preferred consistency.
- Whisk in the vanilla, salt, and egg until smooth, then whisk in the powdered peanut butter.
- Stir in the rolled oats and chocolate chips.
- Drop the dough onto the prepared pan in ¼-cup portions.
- Bake for 15–18 minutes, until set, lightly browned, and 160°F (71°C) in the center.
Let the cookies cool briefly on the pan before serving.
