Ingredients:

  • For the Salad:
    • 1 pound (about 450g) lean ground turkey or chicken (99% fat-free)
    • 1 small onion, chopped
    • 1 bell pepper, chopped (any color)
    • 1 cup cherry tomatoes, halved
    • 1 cucumber, chopped
    • 4 cups mixed salad greens or chopped Romaine lettuce
    • 1/2 cup fresh cilantro, chopped (optional)
    • 1 can black beans, rinsed and drained
    • 1 can corn, rinsed and drained
  • For the Seasoning:
    • 1 tablespoon chili powder
    • 1 teaspoon cumin
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon onion powder
    • 1/2 teaspoon paprika
    • 1/4 teaspoon salt (optional)
    • 1/4 teaspoon black pepper
  • For the Dressing:
    • Juice of 1 lime
    • 1/4 cup salsa (choose a zero-point salsa)

Instructions:

  1. Cook the Meat:
    1. In a large skillet, cook the ground turkey or chicken over medium heat until it’s no longer pink. Drain any excess fat if necessary.
    1. Add the chopped onion and bell pepper to the skillet and cook for about 5 minutes until the vegetables are soft.
    1. Add the seasoning mix (chili powder, cumin, garlic powder, onion powder, paprika, salt, and pepper) to the meat and vegetables. Stir well to combine. Cook for an additional 2-3 minutes until the spices are fragrant. Remove from heat and set aside.
  2. Assemble the Salad:
    1. In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, black beans, and corn.
    1. Add the cooked meat mixture on top of the salad.
  3. Dress the Salad:
    1. In a small bowl, mix the lime juice and salsa together to make the dressing.
    1. Drizzle the dressing over the salad and toss to combine.
  4. Serve:
    1. Garnish with fresh cilantro if desired. Serve immediately.
