Makes 15-16 bounty bars (50g each)
A) – 200g unsweetened shredded coconut
– 1/3 cup erythritol
– 3/4 cup pure full fat coconut milk (canned). Min 60% coconut extract. – 3 scoops (150g) vanilla flavour protein powder (optional).
B)
Chocolate coating (melted)
Dark chocolate (I used 100% Montezuma dark chocolate)
4tbsp powdered erythritol
20g coconut oil.

Preparation

Mix all the dry ingredients, and add milk slowly. It should look like a paste after it’s mixed.
I used a cake tray to place it in the base, placed it in the freezer for 45 mins.
Once is hard but not frozen, make the bounty bars with the help of a knife, I washed my hands several times during the process it’s easier.
After this, freeze for 2 hours, and when it’s done melt the chocolate, with the sweetener and the creamed coconut and I used a toothpick to plunge the coconut in the chocolate, place it in a tray with parchment paper and remove the toothpick with a fork, and so the same with the other 19 bounties.
Place it in the freezer for 1/2 an hour and store fridge/freezer. It’s really tasty.
